Pineapple Chicken Ginger Rice & Veggie Bowl

Makes 2-4 servings

Whatchu Need!

1/2 of a fresh Pineapple

Box of Ginger-Carrot Soup

Bunch of carrots

Bunch of green beans

2-3 cloves of fresh garlic

1 cup of long grain brown rice

1/4 of a white onion

1/2 of a fresh tomato

3 Chicken breasts

Coconut butter

Cayene pepper

Mango-Chipotle seasoning

1/2 of an avocado (optional topping)

Start cooking the rice. Just follow the instructions on the bag since I’m not there to help you with this one. Chop up the chicken into bite size pieces and start a pan on low heat with some coconut butter, add the chicken and start a slow pan fry. Smash and mince the garlic, chop up the onions, tomato, and sauté it with some coconut butter on a new pan on low-medium heat. Don’t scorch the onions, so only keep that medium heat on for a few minutes. Start match-sticking the carrots (see how here) and add them to the pan. Add the green beans to the mix too after you chop the ends off and add a bit more coconut butter to the pan. Bring the heat up a bit for a couple minutes and slowly simmer those veggies into a nice stir fry.

By now the chicken should be golden all around, so you can add some cayenne pepper and some mango-chipotle seasoning… while you’re at it you can toss some on the stir fry mix too. You’re basically done. Add the chicken once it’s cooked through to the stir fry pan and then chop up the pineapple and roast it quickly on high heat for about 2-3 minutes, just be careful you don’t char it. Once that’s done, grab a medium sized pot and add half of the box of ginger-carrot soup and crank the heat up to a medium boil. Let it all stand for a few minutes and grab yourself a nice bowl and chopsticks or a spoon if you dig. Lay down a bed of rice, add the veggies and chicken and top it off with some soup. If you really want to make this a gourmet meal, cut up half an avocado and add that to the top.
